This next blog post is something I whipped up this morning and it’s really healthy! For myself, if I have a busy day it is important to have a substantial breakfast. If not and I am starving in the middle of the day, I sometimes am tempted to grab something quick that is unhealthy. Starting your day off healthy sets you up for a successful day :) Hope you enjoy this healthy breakfast!

Healthy Eggs for Breakfast | 1 SERVING
Preheat the oven to broil. In a small sauté pan over medium heat add the olive oil, the 2 eggs and the halved cherry tomatoes. Don’t mix it, just let the eggs cook for about 5 minutes. Then pop it in the oven for about 2 minutes on broil. Cook the brown rice as directed on the box. Slice the avocado. Once everything is cooked put the rice down and top with the baked eggs. Top with the avocado and chickpeas (season the chickpeas with salt, pepper and your dried herb of choice)! You can also add some sriracha for a kick! Hope you enjoy this easy healthy breakfast!
