Happy Fall Everyone!
This next recipe is one of my favorites! If anyone knows me they know I love, love, love avocado toast. Whenever I make avocado toast I use what I have around. During the fall I love using different toppings on my toast like sautéed butternut squash or sweet potatoes. This next gem is one I created for the Fall and it's supper satisfying! Enjoy! xoxo

Fall Avocado Toast | 4 SERVING
Toast bread until golden brown.
Mash up avocado in a small bowl. Once mashed add in salt and lemon juice.
In a small sauté pan on medium to high heat add 1 tablespoon of the olive oil and the diced onion. Sweat the onion and then add in the diced sweet potato. Sauté the onions and sweet potato until golden brown.
Once bread is nice and golden top with mashed avocado then add a nice scoop of the sautéed sweet potato. Finish with the sumac and salt. Enjoy!
